Tasting NotesFreixenet Spumante is slightly drier than most Spumantes. Its delicate, fruity bouquet is typical of the wine’s Mediterranean Malvasia heritage. It has a very smooth, silky finish. It pairs well with spicy Mexican or Asian dishes. WinemakingFreixenet produces only méthode champenoise sparkling wines. The wine goes through two fermentations with the second fermentation taking place in the bottle. Freixenet Spumante is aged up to 18 months in a cave. This méthode champenoise technique mellows the wine naturally, so it is smoother, without need of such a high dose of sugar, typical of Spumantes. Acclaim86 POINTS BlendSpumante is a blend of three white Spanish grape varieties called Macabeo (50%), Xarel-lo (35%) and Malvasia (15%). Macabeo produces a fairly light but fruity, aromatic wine of medium-high acidity – characteristics crucial to the production of sparkling wine. It is also an important grape in the aging process because its must does not readily oxidize. Xarel-lo yields a robust, high-acid wine and contributes power and depth.
